One of my favorite B&W conversions is this one (which I also used the day we were doing flowers.)

Hey Permie....try this.

Kicked up Lemon Pound Cake

Jello:
1 package plain unflavored gelatin
juice of one lemon
1/2 cup of sugar
1 cup boiling water.

Add sugar to boiling water and dissolve. Whisk in gelatin, stir until completely dissolved. Set aside to cool.

Cake:
4 eggs, separated
1 cup flour
1 tsp vanilla
1 cup cake flour
1 1/2 TBSP Arrowroot powder
1/2 tsp salt
1 tsp baking powder
1 TBSP lemon extract
preheat oven to 350 F.

Beat the egg yolks with the sugar until stiff and pale. Add vanilla, then the cooled gelatin.

Sift together the flour, salt, baking powder and arrowroot powder sift together 3 times, then fold into the egg yolk mixture.

Whip egg whites until stiff but not dry, and fold into batter. Use a 10 inch pyrex rectangular cake pan if you have it. Butter and flour baking pan, then turn the batter out. Bake for 40 minutes or until done.

Icing:
2 cups of powdered sugar
4 Tbsp. fresh lemon juice
1/2 cup Absolute Limon
Mix together until sugar is completely dissolved.

When cake comes out of the oven and before cooling, make a series of holes spaced at half inch intervals completely across the surface of the cake (a skewer or meat fork works best). Make sure the holes extend completely through the cake.

Spoon icing slowly across the cake starting in the center and working your way to the edges ensuring that the icing does not just run off the sides.

This cake is BEST 2-3 days old.

Joshua Tree National Park in April. In fact, that was the trip we made with Lonnie and Lisa in 2008.
