we will get some of their larger pieces, but right now we don't have the space for them...

glad you learned something new - and that you could save money too :)

That's my problem. Even though our house is fairly large, it was originally designed and built by a contractor who planned on using it as a second home, and a place for him and his buddies to hang out when they were in town for golf. He never moved into it, so we are the original owners. It has 4 bedrooms and 5 bathrooms, and a family room/kitchen. The kitchen is wedged into one corner, and has very limited counter space and storage. Add to that my wife's penchant for keeping all her family's old China, there just isnt' much space for all my cooking paraphenalia. I partially solved the problem by buying a rack at Williams Sonoma. It's a free-standing unit with about 5 shelves on it. Each shelf only holds one pot (or two if they're stacked). I'm able to store about a half dozen of my most frequently-used pots on that. There are two large drawers under the range, and I have some more in there. Finally, I have an industrial shelf unit right outside the door in the garage, and I have my really big things stored there. It works, but it's not particularly convenient.

I also have a lot of Calphalon, and a couple pieces of All-Clad.

I would really like a Lodge cast Dutch oven. I don't know why, but things just taste better cooked in cast.

Funny you should say that, Dan. I was watching one of the cooking shows yesterday, and they were using one of them. I told Lois I'd really love to have one of them. I do have a couple Lodge skillets, and use them frequently.

We use to have aluminum nails that were used for that purpose, but somewhere read that the aluminum is not healthy for you. A while back I picked up some 6" copper nails and they seem to work just as well. I don't know if the copper is any healthier, but they do come out looking less oxidized. The aluminum ones would have sort of a black coating on them, the copper ones come out shiney.

A lot of people think aluminum doesn't "rust" but they're wrong. Aluminum will corrode horribly, especially if it's an alloy. This is why the aircraft industry uses a product called Alclad (external link). It's aluminum alloy sheet with a pure aluminum coating metallurgically bonded to it. It's used primarily for aircraft skins. The pure aluminum will corrode less than the underlying alloy thereby protecting the skin. The stuff is very soft and requires very careful handling. A slight scratch is enough to reject the material...

Our cookware is less sophisiticated... We have a set of non-stick from Costco. I have a nice cast iron grill pan I use for meat, particularly London Broil. I've love to get a good set of stainless cookware, then I could get rid of most of our massive collection of non-metallic utensils..

Lois bought me one of these (external link), and I have absolutely no idea what to do with it. I think it's for slow cooking/braising things, but it will likely never be used unless/until I find a real need for it.

Wow!! I just learned something.

My favorites are the Dutch Ovens. You can go from the stove to the oven, then the fridge, and back to the oven or stove again. That's really helpful for things like chili, stew, etc..

Paging the title fairy! :p

It would make an interesting hat if it wasn't made out of cast iron.
