Plant / Weed? Identification

I spotted this one on the side of the road while driving through Mclaren Vale wine district near Adelaide.

Hoping someone can please identify this one or give me some idea if it is a noxious weed or just a really interesting flower.

Buds were about the size of a tennis ball.

That is what I've always called a thistle, not certain of anything. They grow all over American southwest, can be very striking for a weed that many would like to be rid of, no doubt.
