This is a pretty wide open question and is going to vary a lot depending on the scenario, personal preference, equipment, etc.

But just out of curiosity, what settings do you adjust the most? What settings do you adjust the least and tend to leave in auto mode?

That is a pretty open question, are we talking PS or SLR?

On a PS, usually just on auto and I forget about it.

Shooting with my 7D or XSi, I'm usually in Av mode so aperture is what I adjust the most, second would be exp. compensation, next would be ISO.

I generally keep my WB in auto.

I'm a Manual shooter so aperture, shutter speed and ISO are the most adjusted settings.

Least adjusted would probably be WB (I shoot in RAW so it is always changeable without degrading the image).

I probably adjust WB the least since I usually shoot in RAW. If I do shoot in JPG I just need to adjust it once (compared to aperture or ISO or SS).

I shoot in Av most of the time, unless using flash then I shoot M. I am not sure but I probably adjust aperture the most since it effects both the exposure and the look of the photo (I'm not much of an action shooter, so I generally keep the SS to a certain level and leave it there.) With newer cameras I would be interested to see how well auto-ISO works.

Most: Av, Tv, ISO, EC, FEC, Selected AF Point

Frequent: WB (even though I shoot RAW), AF Mode (One Shot/Servo), Live View/LV Mode

Least: Drive Mode, Image Quality, Custom Function Settings, Other random menu things

Out of the main things that pertain to the image itself I change WB the least.
