Shooting in Monochrome

Does anyone ever shoot in Monochrome or do you change the pictures in full color and then go black and white post production in photoshop or aperture? i am doing a school project where im creating a book and it going to be in all black and white and i can't decide how to go about it. thanks for your input.

For my 5D, I have the the files set in RAW, but use the picture mode in Monochrome. That way when Im reviewing the picture on the screen, I can see the black and white adjustments, but shooting in RAW always me to edit them completely in Aperture

You'll have enormously more flexibility if you shoot RAW (or at least a colour jpeg), and convert to mono in post processing. I use Photoshop: a channel mixer adjustment layer to control how each colour channel contributes to the greyscale image, and a hue/saturation adjustment layer if I want an overall colour cast, such as sepia.
