XSi live view focusing

A friend of mine is using the XSi attached to a large balloon and doing some aerial photography. Is there a way to use live view in any of the auto modes (it only seems to work in the creative modes)? Is there a way to focus in live view using the shutter button? They have a wireless shutter release but it seems like to focus in live view you need to use the * button. Is there a way around this?

Use AV mode, stop the lens down to f/11, engage manual focus, set lens focus to hyperfocal distance.

Ex. 1.6x crop body, 24mm, f/11, focus to 8.87ft. Everything from 4.43ft to infinity will be (more or less) in focus.
