Are they really fast method of using with the camera/card reader, or they really just hype?

I have an Extreme Pro 16GB and I question needing it right now. Most say the Extreme line of Samsung (60MB/s) is about as far as you need (if that--some say 30MB/s is good enough) for the current generation of cameras. If you can read this, you don't need a macro | 7D + 5DIII + Waaaay too much spent....

Well, that's true if you're talking about USB. But Firewire800 or Expresscard readers will go much faster. My ExpressCard reader does 76 MB/s downloads from my 60 MB/s card.
