On the 5DII with a strobe do you adjust the flash output on the camera or on the strobe head when needing just a bit of fill?

Via camera adjustment of FEC, when using ETTL controlled flash. If not ETTL control but Auto mode flash, simply lie to the flash about using higher ISO than reality. If manual flash, control on flash via fractional power setting (1/2, 1/4, 1/8)

Depends on what flash you have mounted. If it's a Canon EX or Metz flash that's compatible with the 5D2 camera menu, you can adjust it from either the camera menu or the flash controls. But if the flash is not compatible with the camera menu system, you'd have to adjust the flash output on the flash itself unless the flash is in E-TTL mode, in which case, you can also adjust the FEC from the camera.

Then it's either the camera's FEC (assuming E-TTL) or on the flash (all modes).

Depends on your preference. There are people who think it's faster to change it on the flash. You get +/- 3 stops of FEC adjustment. And then there are others, like me, who like the fact that when changing the FEC from the camera, one doesn't have to take the eye off of the viewfinder to do it. With non xD series camera, you only get +/- 2 stops via the camera. With the xD series cameras, you get the full range available for FEC.

By knowing where the FEC button and the quick dial are on the camera without looking. ;) :D
