Speedlite set-up

Since realizing that you can't use manual mode with the transmitter & speedlites, I'm trying to figure out a decent set-up. I have 18 in wedding party in church, with 3 speedlites available. I think I'll eliminate the transmitter & use one on camera as master & the other two as slaves bouncing off umbrellas. The set-up I am referring to is on page 33 (the top diagram) of the speedlite manual. Speedlites all using ETTL. Camera is 20D, settings, ISO 200, 1/250, f11. If anyone has time to look & comment on this set-up, I'd sure appreciate it!

70-200mmL2.8 IS+17-40L+100mm f/2 macro+50mm f/1.4+85mm f/1,8+1.4 Extender+580 speedlites+STE2+Lightspheres,lumiquest​s,stofens+Jones brackets+CP-E3 battery pack+Pocket Wizards+ studio equipment, etc.

Thanks, Scott. So far, what I gather from that sticky, is that your main light on your camera should be used as fill or not at all, just as the master to transmit. Which I can easily do with my transmitter. Yesterday, you posted on another thread that you use (2) speedlites, one on stand w/umbrella, one on camera. Do you use your camera as fill, then? If so, you simply use the ETTL, change exposure for each light? Thanks so much!!!
