On the XT in M mode, you have to hold down the Av button on the back and spin the wheel.
If you're in Av mode (on the dial) all you have to do is spin the wheel.

90blackcrx Senior Member 985 posts Joined Sep 2006 More info | One thing I noticed tonight guys, some might know this but when your using the 4-1 option, the lens will shot the picture in af even if its not in focus. And the center light will light up red, I guess the only way to confirm it being in focus is if it beeps ? Canon 40d
