This is our salsa recipe. It can be medium hot or very spicy depending on the heat of the jalepenos you put in. Our first jalepenos were perfect. Our 2nd batch are VERY hot. Oh and we grill the tomatoes, jalepenos and anaheim peppers.


This salsa is like a thick chunky-ish picante salsa


5 lg tomatoes, peeled (we grilled them on the bbq long enough to get the skin to split for peeling) & quartered (don't empty out the seeds and juice)
3 jalepenos, (grilled optional) sliced
1 anaheim pepper, (grilled optional) devein and remove seeds then chop into chunks
1/2 7oz can chipotle peppers in adobo sauce
2 sm bunches of cilantro (cut stems off and then cut each bunch into 1/3rds)
1/2 red onion (cut into quarters)
1 tsp of minced garlic
1 tsp of olive oil
the juice of 1 lime
1/4-1/2 cup of iced water


Grill the tomatoes until the skin starts splitting and peeling back. Grill the peppers if you desire. Then peel tomatoes.

In a food processor blend garlic, onion. Then add cilantro & blend. Then add the 1/2 can of chipotle peppers & blend.

Then add:
anaheim pepper chunks,
jalepenos
olive oil
lime juice
ice & water
and 1/2 the tomatoes.
Blend in a pulsing blend to get it to almost the consistency you desire. Then add the second 1/2 of the tomatoes & blend to desired texture.

Refrigerate at least 2 hrs before serving.

Maybe when the tomatoes and peppers in my "balcony garden" finally grow up and ripen I'll make this from the freshest ingredients available. :lol:

Well... Except for the anaheim peppers. I've never heard of those. I'll pay better attention next time I'm at the grocery store.

(And, I always prefer my salsa to be as hot as absolutely possible... :lol:)

We're doing well, thanks for asking :) We're very happy, but very tired. :lol: Jonathan is slowly adjusting to his new "Big Brother" status, sometimes he will go over and "pet" Daniel and say "gentle (sounds like "gin-shull") but other than that he generally ignores the baby unless he is taking up too much of mom or dad's time.
I've been sick for the last week so it feels like the recovery from the c-section is going by even more slowly, but every day is a little bit easier. Brian has been just wonderful; even after a long day at work he comes home and takes Jonathan out to burn off all the his excess energy (which is no small feat! :lol:)

btw, I enjoyed the pictures you posted of Andy's trip, it sounds like it was really enjoyable!

It was nice. We hung out at the beach a lot. We met up with Leyla's dear childhood friend who was down there as well. That was really nice. We collected lots of rocks for our tumbler. We pulled a seine net and IDed the critters we caught. Stuff like that.
We found a new fun place, Cape Henlopen. It is a state park so it is natural with no boardwalks or beach cwap. There are alot of places the dog is allowed and there are no night closures so Leyla and I hung out there late night a lot. We can get a over sand permit and drive out on the beach which we will do next time.

Will be several days before it gets here and then who knows how long to get it installed. And it's HOT this week. suppose to be 100 degrees tomorrow. It's 90 today. Blech. I have a headache. I wonder why NY's and Londoners, instead of complaining about pigeons...why they don't eat them. I've been watching travel shows where pigeons are considered a delicacy...since we have a plethora of them...why not?
