One of my friend's moms was a pastry chef....she was always making cream puffs and eclairs....definitely not doughnuts...baked....and then had to be pricked with a needle to keep the hollow from collapsing.

I have a wonderful recipe for them. But I've noticed that people fry a sweet yeast donut dough and fill them with a cream filling, top with chocolate glaze and call it a chocolate eclair. Yeppers. I have had the real ones a few times. Not even in the same class. They are very tasty compared to the trash they pass of in the doughnut shops. -JIM-
