I am going to start getting into wedding and baptism and was wondering if my 7D is up for it as I think it should do great, but I have been reading that the 5D Mark II is better at IQ and was wondering at what size prints that would be? I think most of my prints would be at the A3 size and I would find it hard to believe that you would see a difference there and if you do then I would buy the 5D and have my 7D as a back up, but if not I would much rather buy something like a 550D as a back up to my 7D just in case, thanks;)

Canon 5D III, EF 24-105 f4, EF 16-35 2.8 L II, EF 70-200 2.8 IS L II, EF 100 2.8 IS L, EF 2x III, EF 1.4x III, 500D 77mm close up filter, Kenko extension tubes set, SpeedLight 600 EX RT, Metz 58 AF-2, Pixel Kings, Benro C3780T Tripod, Benro G3 Ball Head.

Well... for weddings (as a paid, main photographer), you definitely will want a 2nd camera body in case your main body locks up or fails at the most inopportune time.

The 7D is definitely more than capable of producing stunning images. You lens line-up isn't 5D2 friendly, so aside from getting rid of the 7D, or making your 5D2 main and keeping your 7D as back-up, you're going to have to invest in some EF lenses (zoom/prime) for the 5D2. Getting the 5D2 and relegating it to 70-300 duties is cruel and unacceptable.

Also, you'll need to evaluate whether flash can be used at some of the events you plan to use (depending on location), and whether you want the look of a harsh flash altogether. If you want the shallow DoF, you'll need to invest in some wide aperture primes to help isolate the subjects.

Your currently gear can pull off a mediocre set of wedding photos, and you can make up for much of it through talent/skill/luck. But ultimately, you'll going to want some nice lenses: 35L, 85L, 135L (for example).
