Tripod head question

I’m embarrassed to ask this but, I need to know….

When a tripod head says it can “support” an XXX amount of weight, what is it exactly referring to?

I currently own a Manfrotto 055CXPRO03 3 Section carbon fiber tripod legs and a 322RC2 Grip Action ballhead which supports 11 lbs.

When I shoot macro with my 7D/battery grip and the 100L IS tilted for my shot, the ballhead losses grip.

Is this where the max weight “support” comes into?

Well, "support" is like a car's "MPG" - it's under ideal conditions. But it's actually worse than that, because there aren't any standards between manufacturers. So if you carefully balanced the load over the center of the ball head, yes, it could probably keep 11 lb. in place, as long as there weren't any outside forces acting on it. But with the load a bit off center, you run into other factors, like torque, that will give you the slipping you're seeing.

I'd suggest getting rid of the 322; it sounds like a better idea than it is in practice. Replace it with a solid ball head; a Manfrotto 498RC2 if you want to stay with the Manfrotto release plates or an Arca-Swiss-compatible head and RRS L plates if you're open to change (and willing to spend for it; RRS plates are very good, but not cheap).

I guess it's time to upgrade the head. It's a great head but, I'm starting to see it's limits on what I need it for.

Thanks for the recommendation. Looks like 498RC2 has the extra weight support and the ability to do a 360 pan movement for my landscape shots.

Another question. I've been looking at RRS plates...

Are they compatible with battery grips?
