My budget is
$300 - Legs
$200 - Head

I would primarily use this for landscapes, panoramas, macro, and in the future, some video.
Maybe a portrait session or two, but mostly nature.

I want something with good adjust abilities and something that feels very smooth and nice quality. Lighter is nicer, so I might consider paying more for carbon fiber, but I'd like to keep the total around $500.

Future gear I'd like it to be able to hold:
5dmk2
70-200 f/2.8 IS
and the rest is pretty light prime lenses and such, so it shouldn't be much of an issue.

Try these guys - http://www.redsnapperuk.com …d-283+RSH-12ballhead.html (external link) - despite the price they have very good feedback, I have one and have found it very good (but have never used another tripod so cannot compare), also (this is where I get into trouble!) if you're e member of another forum (http://www.talkphotography.co.uk/forums/showthread.php?t=55162 (external link)) you get a discount :)

I have been very happy with my Benro set-up! I will be buying another head soon for a second set of legs I have.

For real video you'd want a real video fluid head.

For anything else, you'd want arca-swiss compatible heads. And for legs you'd want carbon fiber.

I personally have a Manfrotto 190CX3 (bought new on offer) and Kirk BH-1 (second hand) with plates.

If I do video, and really get into it, I'll probably buy another tripod head.

I was looking at this:
