A few ???s about shooting video...

I've been trying to shoot using my prime lenses... and just move to and from my subjects... that seems simpler than trying to adjust focal length to "maintain distances"...

When I do that should I set my lens to MF and infinity? If I do that, is the DOF still mainly controlled by the aperture setting? I know that there are some other things that affect DOF but that has the largest affect... (right?)

Anyway if you have suggestions about how to "setup" in this situation that would be helpful....

I use my tripod setup(Manfrotto with pistol grip ball head) to shoot video...
I take the center column out of the tripod with the pistol grip head attached and use that to steady the 7D so that the video will look better...many times I shoot upside down in order to gain a different perspective more fitting to the subject (my young children)...
