we use gas because it's fast. But I prefer food cooked over wood embers. Thing is, it's not something that is really an option that I know of. Just something we used to do when we were camping (when I was a child).

Gas is cleaner, easier, more controlable, and healthier given the concerns of eating charcoal grill cooked food. Gas grilled food is slightly less smokey tasting.

Lump charcoal makes big wood embers. It is just burnt wood. It can be a bit hotter and faster so trickier to control but I like it.

This is a good thing.

It also looses a lot of that grilled flavor and texture. It's somewhere between cooking on the stove and charcoal. I'd rather use the gas grill than cooking on the stove top, but prefer the weber to both by a large margin.

So Dan is at the chinese place picking up dinner. I just got a photo text of the underside of a catfish saying "this fish sucks". Sometimes I feel like I did when I first met him and looked "askance" at his weirdness.:lol:

update:
Head is stuffed. coughing. Feel cruddy. (no more barfing though so that's good) Have rendezvoused with Nettie 2x already today. :|

TERRI! MORE PURPLE AIR!

Awwww sorry your still feeling cwappy.:(

As to a grill..... we are grill less. I finally convinced hubby that we need a Traeger though!!!! He said we would get one next year when we are settled in one spot. Really don't want to transport one of those everywhere we go.

I love the way weber's indirect cook. Coal on one side, food on the other.
