Does 1D Mark III come with C1/C2/C3 mode?

No but better than that, you can save up to 10 of your cameras settings to your memory card and reload them later. You can name them with text names rather than C1, C2, C3... Then if you have more than one 1D Mark III you can share the settings among them which you can't do with 40D/50D/7D.

Probably not, a format will likely delete those settings though you can back up those settings to your computer or something and then do a format and copy them back of course.
