Can the 40D go pass 30 second exposure? If not, do you know which can?

The longest internally timed shutter speed is 30 seconds. You'll have to put the camera's shutter speed into the "Bulb" setting and use a lockable remote switch to make any longer exposures.

A lockable remote switch? Meaning a remote in general right? So basically, if i buy a remote, I switch it to "Bulb" mode on the camera, hold the shutter speed for how long I want on the remote to get over 30 seconds of exposure correct?

Yes, in the bulb shutter speed the shutter will stay open as long as the remote button is held. Most come with a button lock to hold down the button for you.

I believe the Canon Timer Remote (TC-80N3) will do timed exposures - it looks like you can set the exposure up to 100 hours.

Not sure about the 3rd party timer remotes - may be worth a look if you're doing really long shots.

Yeah, those only work on the Rebels. Canon decided the higher end models needed a much "better" remote so you get to pay $60 for the RS80E3 (which is the same thing in a bigger case with a special plug) or get an ebay generic. There aren't any adapters, sadly.

I'm not sure what it looks like or where to buy it, but the port on the 40D is an "N3" port, as opposed to the "E3" port on the Rebels. I don't know how much the adapter might cost, but the POTN Support Shop sells a wired remote (external link) that replaces the RS80N3 for $12.99. That would probably cost you less than the adapter. It also has a slide-lock button for bulb exposures.
