I'd have to say the current Dalai Lama. And then maybe Michelle Yeoh. The 'beautiful women I'd love to photograph list' is nearly endless, though. My answer to this would change daily.

Of course, the ultimate photo would be Elvis, Jackie Onassis and the Loch Ness monster all in the same frame.

Or maybe I would photograph God, I figure if it comes out black and empty I could just say I messed up the exposure but I'm sure He's in there somewhere. In fact...maybe I have a few pictures of him already...;)

Bruce Willis. I think he's at the right age where he still has that intense look but is starting to get wrinkles (i find wrinkles add something that plays with the audience's eyes)
