I've been looking at grids lately, and I have a couple questions...

1. What's the difference between using a 7"/60` reflector w/grid and using a 8.25"/50` reflector w/grid? Is there a comparison anywhere?
2. If you could only have one grid, would you go with 20 or 30 degrees?

I have only one grid 20deg. Wish I bought the whole set or even two sets.

I always have used the 7" grids/reflectors....so I can't comment on 8.5", but I will point that a grid-set can be pretty cheap, and having the right tool to do the job is priceless. I'd highly recommend going for a full gridset (20, 30, 40).
