Looks overexposed and washed out. Darken the shot, bump the contrast, and add a bit of saturation.

Far from me to be an expert about these food shots.... I would have tilted it forward a bit or had camera higher to get less front shadow.

A good start - I downloaded it adjusted levels (brought in both B and W points), added adjustment for Local Contrast and smart sharpen...made all the difference.

Alright hows.. this

It's OK overall, but the fruit looks dried out. I'd light the shot, cut new fruit, & then shoot while it's still wet. Or spray it to get better highlights.

Shoot it from above, the strong shape of the plate will contrast well with the random shapes of the melon, also as suggested the fruit could do with some moisture/moisture drops and colour saturation, just my opinion.

spike - the colour looks better, but now it looks like cuts of beef and potato halves.

as its watermelon , what about cutting the melon again but leave the green outside on, to give more colour
