In Japan, I'd skip Fukuoka and maybe spend time in the north (Hokkaido). The offshore islands are a real treat if you can find time to visit, I have a few suggestions if you are open to it.

Great stuff, if you stop by Vancouver I think us Canuck boys will take you out on a tour ;)
