with the nifty its about shooting as close to wide open as you can get away with using the light you have. the nifty goes to 1.8 so that will give you the most bokeh. set your camera to AV mode and set the aperture to 1.8 and go from there...
this is a nifty fifty shot at 1.8 focusing on a tip of grass in the local conservatory. the background is blurry since you are shooting wide open...

I bumped the iso a bit to get faster shutter speed so that i stood a better chance of getting that tip in focus
