This has drilled down towards the lower bodies as far as the 60D now. In the camera you can there select new folders as you like, 101, 102, 103 etc., and then go back from shooting in 103 to 101 (if there is space) if you like that.
If you use a computer, you can do as I do on my 7D, where I have a structure similar to
100SPORT
110_WORK
120PARTY
200EOS7D
The camera defaults to the folder with the highest number if you open the battery or card door, so I have the 200EOS7D folder as the one for general use.
If I then use my camera at work, and remember to do it, I select 110_WORK and make it easy to find all job-related photos. I can also delete per folder, so it's easy to get rid of the job photos, which I probably don't care about saving at home.
Should I forget to select the proper folder, I'm no worse off than if I had everything in one and the same.
The 1D series have more flexibility here, so the features aren't the same in lower bodies, but this you can do on the 7D and 60D. I assume on the 5D Mark II too.
If I "roll over" when shooting, the camera automatically creates a folder above the one with the highest number, so nothing comes in the way of anything else.
