Bit Depth on a 7D

I was editing in Photoshop the other day and I realized I didnt have the option to save in Jpeg format. After some research I realized this was because th picture was set to a 16 bit color depth mode and needed to be dropped to an 8 bit mode. This is fine I can save TIFF if I need to, but my question is this, if the Jpeg format only supports an 8 bit color depth then if I'm shooting Jpeg and not RAW on my camera is it dropping the color depth from 14 bit to 8 bit to compensate for the format?

Canon claims that converting the RAW to jpeg, thus to eight bits, gives a better result now when you have 14 bits to start from, instead of the 12 bits in older cameras.
