What do you guys think? seems to me the 40D burst rate and AF system is built for AI servo action, so I would suggest the 70-300 something, unless you liek stills, then you don't need the IS for the 70-200...

Depends on a lot of things, one of which being the often-used combination of 1/80 of a second at 300mm at 5.6, which is about as worst case as you can get. There's also the difference in sharpness caused by different post-processing capabilities, as well as sample variation between lenses.
