...but when I download the files off my 5DII or view them on the camera through windows explorer, I'm only getting small jpegs. From what I can see in the camera manual, I've done everything right. When I go through the images on the camera the recorded size is shown as "RAW + [fine] S 1.47 MB". I took 111 shots, and the camera is showing space for 132 images remaining on an 8GB card, so that leads me to believe that the uncompressed images are on there somewhere, but I can't figure out how to get to them.

I was hoping that these shots could be used for 8x10 prints, but if all I can get are small jpegs that require sharpening and contrast, I fear the quality will not be good enough.

It sounds like you are using some kind of image-recognition software to view/download, and the software does not recognize the Raw files, only the jpegs, because jpegs are not images. For example, when an automatic window opens it likely is the Microsoft Image utility. What you will need is either a card reader (it is a plug and play device) so that you can copy the files directly using your system browser or software that responds to either your camera being plugged in or a card reader being plugged in.

Have you tried EOS Utilities and ZoomBrowser, the Canon software that came with your camera? Both of those have software that can help both in connecting with your camera and/or a card reader.

I haven't tried those yet. I will do that before spending the money on a card reader.

The EOS Utilities allowed me to do a direct transfer of both jpeg and cr2 files. Thanks for the tip Tony!

Great! That cleared up the one thing! A card reader is also a good thing to have, in case the drivers for the camera communication get screwed up (it happens) but at least you are up and running.
