Planning my son's senior photo shoot

Just took delivery of my 7D (10D upgrade). Have never done off-camera flash photography, but I've done lots of reading!

Here's what equipment I'll have for my son's senior photo session:
7D, Tamron 17-50 2.8, Canon 70-200 f4 non IS
550EX, diffusing umbrella with light stand and hot shoe bracket
40" 5 in 1 reflector
Tripod

My plan>>
Outside: will play with flash/no flash and use reflector
Inside: flash/umbrella from different angles, maybe use sunlight through window; I have an old projector screen I think I can use as a background for head shots...

With the camera>> 1 shot, evaluative metering, use single point focusing, will probably use the 70mm end of my 70-200 f4. Meter for background probably using f/4; adjust ISO so I'm shooting at around 1/125 or so........
I'm thinking I'll disable the popup flash and just work with the 550 for fill; I'm not real clear on whether I should do this via ETTL or manual; if I'm overblowing with the flash should I use FEC or change flash to manual output?
I may have a couple questions about the wireless setup...... Am I the only one that thinks that the popup flash throws a ton of light for wireless transmission when it is disabled?

Thanks for any thoughts or tips...
