Sun in the frame question

I'm always having trouble focusing on the subject when I want to include the sun in the shot. I have done it, but seems very cumbersome.

I use ETTL & HHS for this type of shots. I go for the shutter priority of 1/500s to have the sun "star" look. I try to cover the sun with my free hand, covering the glare on the lens, while attempting to focus on the model's eyes. Once I get the red focus signal, I take my hand out, recompose if needed, and take the shoot.

Is there an easier way? How are you guys doing it? Thanks!
