Adobe Media Encoder (Mac) CS4 - how to export to AVI?

Actually, you would be surprised how often renaming MOV to AVI works.

I just renamed a JPG file to GIF file extension. I didn't convert it, just changed the file extension. That doesn't make it a GIF. I double click the file and it opens, but it's not a GIF, it's just that the software can read both JPG and GIF, so doesn't distinguish between the 2.

I believe this is what you're experiencing by renaming your MOV to AVI. The software can read both, so no trouble.

My problem is that the people I need to send the file to really, truly need an AVI format file, not just some other format with the file extension changed.

I went through the same thing this summer. A client needed a video in .wmv. Needless to say, Macs sure don't export to .wmv. Look for a windows program that can convert .mov to .avi and move the file from your mac to a windows machine. Using that windows machine, convert the file. That is how I had to do it. It wasn't a pretty workflow, and I think it degraded the quality (.wmv is a terrible format), but it worked.

I was not talking about JPG/GIF. It works only with MOV/AVI (works sometime)

That MPEG Streamclip that Terjay mentioned above seems to be the ticket. Native to Mac, does what I need, plenty of options. Thanks everyone.
