If I use the center point to focus with the IS on does it actually do anything if I recompose the picture? Does the IS just stabalize the image at the time of focus or does it continune until the shutter is fired?

It basically lessens the movement. If you hand hold the camera and focus on a distant subject, you will probably have a hard time keeping focus on your subject. If you press the shutter button 1/2 way, you will see the movement lessen. - Ed
