So, one of my Lacie Drives decided it wants to be reformatted.....

As I run my Light Room 3 Catalogue off my computers hard drive, this shouldn't be a problem from a file stand point.

1. Back up and move files.
2. Reformat External
3. Restore files back on to External.

But will this do anything to any adjustments made to said files?

Lets say, I took one file, Fix exposure, put a gradient on it, and then changed it to black and white. Then made a virtual copy of it. Would all of those adjustments still be there when everything is restored and back to normal? Or do I need to watch out for "sidecars" as well?

Thank you in advance.

if you still have the catalog then all your changes will be saved.
the sidecars file will only have the changes, if you have turn on the option of saving to it else the changes are only made to the catalog

Just be sure to put everything back with the same location path, including drive letter. It will save having to reset the locations in LR.
