You will see picture styles applied to RAW files only if you open the RAW files in Canon DPP. You still have the option of changing to other styles or doing custom adjustments. Third party softwares are not set up to use the picture style parameters that are tagged to the RAW file.

Picture styles will also effect what you see on the camera's LCD while shooting RAW. Not that the LCD is all that accurate to begin with.

Picture styles suggest how the photo would look if the camera was set to take JPGs and did its own internal processing. As said already... picture styles have no effect on the raw file.

You can apply any and all in DPP after the fact, should you want to.
