Newbie to EOS B/W query.......settings?

Hi all...thanks for being here.
I used to do alot of portrait work using litho film...Kodak 2455, I think was the designation.(We're talking the 80s here) It had no speed rating. I always shot it at 25 asa. I gave the finest grain I've ever seen. It also showed in basically three tones...white, black, and a lovely gray.
Any chance of getting anything close from my new 8mp XT?????
Any setting tips/ideas appreciated. And then there's the whole printing process...and which paper etc.

PS is your friend! There a lot of different ways to convert to B&W in the "Post Processing" Stickys. Take a look. ;)
