In either levels or curves, there are three droppers. The white one sets white point and defaults to 255.255.255. ---

If you use 95% brightness on the highlight dropper, you'll only get a little clipping (mostly in the red channel) on the bread. If you want to avoid even that, select the background, then open the curves layer and click the dropper. The selection will automatically create a mask on the adjustment layer when you open it. (By the way, always use adjustment layers for this kind of adjustment; never work on image pixels). ---
