As others have mentioned, ditch the AMD and go with an Intel i5 or i7 quad (you'll also need a different board).

And, you don't need 2 graphics cards to run 3 monitors.

The new AMD/ATI cards support eyefinity that lets you run several monitors from the same card, working as a single desktop.
The system works best with 3 monitors per card and uses both DVi out puts, plus a display port (most of the cards have an HDMI output as well, but only 3 of the 4 outputs are supported at once).

Yeah definitely ditch the AMD x4 970 and get the new i5-2500k or i7-2600k. The price of the i5 CPU should be very close to the AMD 970 but it's almost twice as fast on the Photoshop benchmarks. And it's supposed to overclock very well too.

Scratch disk is used regardless how much Ram you have...PAGE file (virtual) memory will be truly "virtual" (little used) with 16gb of Ram...but don't disable it...some IS needed for OS....
