In general I find:
The noise is about one stop less on the 5D.
However: on most side by side tests the 7D seems sharper, it almost looks like the 5D does some in camera NR (yes, on RAW).

Now if I NR the 7D to the point of same sharpness as the 5D...
The pictures would probably look very similar.

Anyway, I went for the AF system which is much better on the 7D for sports and BIF.

Full frame should always be better than the crop from the same tech. generation, just for clarification.

And the 7D does well at ISO 6400 for up to 8x10s, which is nice. Taken last night at a game...

I'm mostly a video person, but I photographed an event the other night and used both a 5d mkii and a 7d with a 70-200 2.8is ii and a 24L. This was an awesome setup as you could switch lenses back and forth for different effect. 70-200 has a lot of reach on the 7d for candids and is great for portraits on the 5d. 24L was a great wide on the 5d and then a nice "normal" lens on the 7d. Honestly I don't know how you could shoot an event professionally with just one camera.

You didn't say what lenses you had. If you ultimately plan on getting both I would look at which camera is a better match to your lenses. If you have all EF lenses or FF lenses then the 5D2 is a no brainer, if you have some EF-S or crop lenses then you might want to start with the 7D. Both are excellent cameras that can handle a wide range of photo jobs. The 7D is an excellent wedding and event camera, as the 5D2. Look at you overall situation including your budget and your existing gear.

About a full stop better at noise than the 7D. The 5D2 looks as good or better at 1600 ISO than the 7D does at 800 ISO. How much is that worth to you?

Get the 5D II, although the wireless shooting in the 7D is quite nice to have.

If money is not a factor...
If I can only have one of these two I will select the 5DMII. I only use my 7D for sports and birding for everything else I use the 5DMII. 5DMII has better ISO performance, beter IQ, and its FF. Now, the AF on the 7D is way better than the one in the 5D. The 5DMII AF points on the edges are not as accurate as the 7D AF pts. They both are good machines but based on what you will be using it IMHO the 5DMII will be the better option.

Good luck but you will be happy with either camera.

If you have both, I would love to see a demonstration of the 2 stops better performance. I have run 3 different 5D2s and a 7D side by side in back to back comparisons, and haven't ever seen a 2 stop difference. I am very curious to see others' comparisons, because alot of people just have gut feelings by comparing different images by different people to come up with their opinions.

Just shot for this example, same lens, same exposure settings, different FL from each. The scene as shot via ISO 3200 on the 7D...

I agree the 5D2's high ISO is better than the 7D (one of the reasons I am moving to FF soon), but not the dramatic difference that people say. My good friends all shoot with 5D's and compared to my 7D, it is not night and day (it's very usable), unless you're printing very ENLARGED prints. Here are a couple examples of a ISO 6400 and ISO 12,800 shot w/very little NR for reference (nothing great - just an example). OP - the 5D would probably be the better tool based on your interests.

Here are the two camera shots at 100% crop, the 5D and 7D.... I don't see 2 stops, I see about 1. If I shoot the 5D at 6400, it looks like the 7D at 3200.

I have never been able to get anything close to what you got shooting at high ISO.

ANd just for the record, I'm not saying that I'm right or wrong, all that I'm saying is that the first time I got a picture that I was happy with while shooting at ISO 3200 or above was when I got the 5D2. (Maybe I should also stop looking at the pictures at full screen on a 17" Macbook pro...
