Get yourself a Canon 50mm 1.4 and ask the guy above how he set up the shot and you just might get that sort of image from your 7d.

I sold the 50 F1.4 before I got the 7D, it was never great wide open. Like all Canon lenses I used its focus performance (accuracy, speed) left a lot to be desired.
Nikon D700 and their 24-70 gives me absolutely stunningly sharp images, consistently.
