The flash systems really aren't that different, they're definitely not a reason to choose one system over another. Nikon flash is a little more consistent and requires less knowledge and experience of the user, but if you know what you're doing Canon works fine.

I shoot manual flash when i'm doing off camera anyway, it's far more reliable than either of the built in systems.

True. I've used Nikon's flash system and the big thing with it is consistency. If you know the limits of each system then there shouldn't be a problem.

My biggest complaint with the 580EXII is that i physically cannot work the dial on it at all :( also the menus and everything about it are a lot more confusing than the much more simple Nikon units...

Not saying the Canon system is really "terrible" but I like how the Nikon works more..Also again..their Macro flash is nicer than the Canon and a LOT cheaper

It all depends on your needs. If I were to go all prime, it would be the 24, 35, and 85.

I rarely needed to use the dial on the 580 II. I just turned it on and controlled it from the camera.

I don't find Nikon significantly simpler. While the Nikon system has plenty going for it it's not all "the grass is greener". The physical controls and UI aren't as intuitive, and the camera menus are extensive and slightly confusing, though once you have them set up they're fine. On the upside the focus system works very well, the flash system requires less messing about with, and they're generally well built and robust. Just don't expect rainbows and dancing unicorns, they're tools with their fair share of quirks but they generally work well.

Its a slippery slope my friend. Today its a D800, tomorrow its a D4 with a 200 f/2G :lol: As for the beginning when I get the lenses I need, a 85 will be all I would need. But then again, adding a 35G wont hurt either ;)
