As we all know dogs can be quick but it's not like shooting car races or the like. Not taking lenses or anything else in consideration would the recommendation be for the 5D or the 1Ds series?

Though either one would do the job adequately. A good photographer can take extraordinary photos anywhere, with any camera and any lens while a mediocre one will take mediocre ones everywhere, with every camera and every lens.

Or a D700, which has the benefit of good AF as well. 5D & 7D (both gripped), 24-105L, 100-400L, 15-85, 50 f1.8, Tamron 28-75, Sigma 12-24, G10, EX-Z55 & U/W housing, A1+10 lenses, tripods, lighting gear, etc. etc.
